Grilling Season is Here!
Cedar Plank Grilled Salmon
Wine and Grilled Salmon Pairing

INGREDIENTS

  • 2 Tbsp light brown sugar
  • 2 tsp smoked paprika
  • 1 tsp coriander
  • 1 tsp cumin
  • The zest of 1 lemon
  • Salt and black pepper to taste
  • 2½ pounds skin-on salmon fillet
  • A cedar grilling plank (about 15 inches by 7 inches)

This delectable dish is great with our 2015 Napa Valley Syrah. The soft smokiness and subtle sweetness of the glaze complement the rich flavors of the Syrah. Salmon has a meaty, succulent texture that alleviates tannin, allowing for nuance to emerge in the wine.
Soak the cedar grilling plank in water, 1 to 2 hours. Heat grill to medium. Combine sugar, spices, lemon zest, and 1/2 tsp each salt and pepper in a bowl. Rub spice mixture on flesh side of salmon. Place salmon on soaked plank, skin side down. Grill, covered, to desired doneness, 15-20 minutes for medium. Chef Britny likes to serve this salmon with an avocado, grilled corn and tomato salad.
Team Member Spotlight
Meet Vineyard Manager, Jake Terrell
Sequoia Grove's Vineyard Manager, Jake Terrell
Jake took over Sequoia Grove’s vineyard management in 2016. If you ask him what he enjoys most about his position, he’ll tell you it’s our commitment to and investment in sustainable practices. Jake manages the farming of our 70 acres of Napa Green Certified Estate Vineyards, overseeing all aspects of vineyard life required to maintain healthy vines and ensure the highest quality fruit. Jake is also Director of Vineyards for sister winery, St Francis, farming over 400 acres in Sonoma Valley. His philosophy on managing vineyards is two-part. He farms vineyards with an eye towards winemaking, so quality is key to everything he does. “I have the same goals as the winemakers,” Jake says. “We’re all working together to make the best wines that reflect unique, diverse terroir, all while taking care of our employees and the environment.” Secondly, do the right things at the right times. “If canopy management is timed correctly, the vines cooperate perfectly.”
When Jake's not working, he enjoys spending time with his wife, his two children and his dog, Willie (see above). He is also passionate about mountain biking, kayaking, cooking, travel, and drinking wine.
Healthy Vines, Tasty Wines
National Learn About Composting Day
Wednesday, May 29th is National Learn about Composting Day - but it's never too early to start!

Composting helps repurpose organic waste for good, providing major ecological benefits to the health of plants. Sequoia Grove uses a vineyard compost blend of grape pumace and local household yard and kitchen waste made by Upper Valley Disposal and Recycling. Right now in May we are applying 10 tons per acre! We apply it to the surface of the soil and then immediately disc it to turn it into the soil to keep the beneficial microbes and fungi from drying out in the sun. Compost is good for the community and crucial for the health of the vines.
