Spring is in the air! One week from today is the Spring Equinox, and we will be celebrating the official start of the new season with the highly anticipated release of our 2018 Sauvignon Blanc and Rosé. In the meantime, please enjoy springing forward with our March Newsletter!

St. Patrick's Day Favorites
Mini Shepherd's Pie
Wine and Shepherd Pie Recipe

INGREDIENTS

  • 2  large potatoes & cream for mashing
  • 1/2 lb lean ground beef 
  • 1 tsp steak seasoning
  • 1 Tbsp ketchup
  • 1 tsp Worcestershire sauce
  • 1/3 cup frozen mixed vegetables 
  • 1 can (8 oz) crescent roll dough 

Heat oven to 375°F. Spray 12 muffin cups with non-stick cooking spray. Peel and quarter potatoes and boil in salted water until tender (about 15 minutes). Heat olive oil in a large non-stick skillet over medium-high heat. Add ground beef and steak seasoning and cook until browned. Add ketchup, Worcestershire sauce and vegetables to skillet and cook 2-3 minutes. Add salt and pepper to taste. Remove from heat. Unroll dough on lightly floured work surface. Press dough into a 12x9-inch rectangle, and cut into 12 evenly sized squares. Place one square of dough in each muffin cup, gently pressing dough into bottom and up sides of cup. Drain and mash potatoes, adding cream as needed and seasoning with salt and pepper to taste. Fill each dough cup with 1-2 Tbsp of beef filling then top with a spoonful of mashed potato. Bake 15-20 minutes until dough is golden brown. Cool 5 minutes before serving. We suggest pairing this classic dish with our 2015 Napa Valley Malbec.

Mini Irish Soda Bread Muffins
Wine and Irish Soda Bread Recipe

INGREDIENTS

  • 2 cups all-purpose flour
  • 1/2 cup plus 1 Tbsp sugar divided
  • 2 tsp baking powder
  • 1/2 tsp kosher salt
  • 1/2 tsp baking soda
  • 1 tsp caraway seeds plus more for sprinkling
  • 1 egg
  • 3/4 cup plain low fat Greek yogurt
  • 1/4 cup low fat milk
  • 1/4 cup butter melted
  • 1/4 cup canola oil
  • 3/4 cup golden raisins

In a large bowl, whisk together the flour, 1/2 cup sugar, baking powder, salt, baking soda and caraway seeds. In a separate bowl, beat the egg, yogurt, butter and oil. Slowly add dry ingredients until moistened. Fold in the raisins. Fill a greased mini muffin tin 3/4 full of batter. Sprinkle with remaining sugar and caraway seeds. Bake at 400°F for 15 minutes or until a toothpick inserted near the center comes out clean. Cool for 5 minutes before removing from pan to wire rack. Serve warm or at room temperature. Open a bottle of the 2016 Napa Valley Chardonnay and serve alongside.

Corned Beef Sliders on Potato Rolls
Wine and Corned Beef Recipe

INGREDIENTS

  • 12 slider-size potato bread rolls
  • 1/2 pound sliced corned beef
  • 1/4 cup Guinness mustard 
  • 1 cup of your favorite coleslaw recipe

Guinness Mustard:

  • 1/2 cup whole grain Dijon mustard
  • 3 Tbsp regular Dijon mustard
  • 3 Tbsp Irish stout beer (like Guinness)
  • 1 Tbsp shallot, minced
  • 1-1/2 tsp light brown sugar

To prepare the mustard, whisk all the ingredients together in a small bowl until well blended. To assemble the sliders, spread the mustard on both sides of the roll. Spoon a dollop of slaw onto the bottom half of each roll, followed by one or two slices of corned beef. Place the other half of the roll on top. Our layered and juicy 2015 Napa Valley Cabernet Franc will pair perfectly with this dish!

Meet Christi Baiko – if you haven’t had the pleasure of doing so already! Christi joined the Sequoia Grove Team five years ago and loves chatting with visitors in the Tasting Room. When Christi is not at Sequoia Grove, she’s spending time with her daughter, and her two cats and two dogs (the Fur Mafia). We caught up with Christi for a little Q & A this week:
 
What is your favorite part about working for Sequoia Grove?
There are so many things I love about my job, but I don’t think it will be a surprise to anyone that my favorite part is working with our wine club members. I truly think we have the best members of any winery and I adore getting to see them regularly and keeping up with their lives. Whether they have been with us for hundreds of visits or have just joined our family, seeing their smiles when they walk through the door makes me so happy.

What’s your favorite SG wine + food pairing?
Cab Franc with green, briny olives or lamb chops. Syrah is my go-to wine in the summer for BBQs (It holds up so beautifully with those big flavors), but I also love Syrah in the winter with curry, pho and Korean BBQ chicken. It’s robust enough to not be overwhelmed by a dish that has a lot of spice and depth.

What are some important causes to you? What organizations are you part of and why? 
I spend a lot of my free time and energy working with organizations that benefit children. I’m honored to have spoken on behalf of March of Dimes, Make a Wish, Children’s Miracle Network and UC Davis Children’s hospital among others. I dedicate the majority of my energy to CMN and UC Davis Children’s Hospital because they are the only reason my daughter Zoë is alive today. Now I serve on the CMN executive committee. I have the honor of helping make decisions that directly help kids and their families get through a scary illness so they can get on with making a lifetime of memories. Just like Z, they each DESERVE a full and happy life and I love being a tiny part of helping make that happen.
