Chef Britny's Dungeness Crab Cake
You're probably curious about the delicious pairings we have created for you, and Chef Britny was kind enough to spill the beans on one of her featured recipes. These Dungeness Crab Cakes are the first dish on our July menu in the Wine & Food Experience, perfectly paired with our Haire Vineyard Chardonnay. If you're not afraid of spoiler alerts, go ahead and try these at home!

Wine and Crab Cake
  • 1 pound Dungeness crab meat
  • Zest of one lemon
  • Zest of half an orange
  • 2 tsp chives
  • 1 tsp tarragon, minced
  • 2 tsp parsley, minced
  • 1/4 cup mayo
  • 1/4 cup sour cream
  • 2 eggs
  • 1/2 to 3/4 cup bread crumbs
Mix all ingredients together thoroughly. Cover and place in refrigerator for at least 30 minutes. When ready to cook, form crab into 6 - 8 patties depending on how large you want your cakes. Heat 3 to 4 tbs. of olive oil over medium heat in a non-stick skillet and fry the cakes until golden brown on both sides and cooked through, about 7 to 8 minutes. Serve with a dollop of sour cream and baby greens!
