Spring is officially in full bloom! This long awaited season is quite possibly the most important time in the wine growing process. New shoots break out of dormant vines and can grow as fast as 1.5 inches in a single day. The start of bud break gives the first hint of what type of season it might be but there are still many long months before harvest. Now that the weather is warming up, you may be planning your next Sequoia Grove Visit. If you're planning on traveling in the upcoming season,

A Bright Spring Recipe

Spaghetti with Pesto and Asparagus

Wine and Spaghetti Recipe

INGREDIENTS

  • 3/4 lb spaghetti

  • 1lb asparagus, ends trimmed, sliced in 2" lengths

  • 1/2 cup grated Parmigiano-Reggiano cheese

  • 1/2 cup of olive oil - plus more for drizzling

  • 2 cup fresh basil leaves

  • 2 cloves garlic

  • 1 Tbsp fresh lemon juice

  • Salt & pepper

  • 1/4 tsp red pepper flakes

  • 1/2 cup toasted pinenuts

In a pot of salted, boiling water, cook the pasta until al dente. Drain and reserve 1/4 cup of the pasta cooking water. In a large skillet, sauté the asparagus in a tablespoon of olive oil until bright green and slightly softened, about 3 minutes. Combine olive oil, cheese, basil, lemon juice, garlic, red pepper flakes, and 1/4 cup of the pinenuts in a food processor and pulse until paste forms, scraping down sides as needed. Transfer to a large bowl. Stir in remaining toasted pinenuts and sautéed asparagus. Add the hot pasta and reserved cooking water and toss until the pasta is well coated with pesto. Season with salt and pepper and drizzle with olive oil to taste. We suggest pairing this delicious springtime dish with the crispness of our 2018 Napa Valley Sauvignon Blanc.
