Dark red in color with aromas of blackberries, violets, plum, toffee, toasted barrel, bacon fat, and warm spices. The palate is very decadent with fine-grained tannins and a slightly chewy finish. Winery Exclusive
HARVEST & WINEMAKING
The fruit for this wine comes from the Stagecoach Vineyard in Atlas Peak, from one of the highest blocks, block 8, with southern exposure. The Cabernet franc is a French clone also from Stagecoach vineyard block I. Both harvested October 29, 2012, at 25.4 Brix 25.6 brix, respectively.
The fruit cluster sorted before a two-day cold soak. After inoculation with French yeast, the wine underwent small-batch fermentation, with gentle pumpovers 2-3 times per day. In barrel, the wine underwent malolactic fermentation and was racked twice before bottling in June 2014. The wine will be bottle aged nearly 2 years prior to its release in Spring 2016.
